Chef Bob's Rum Barrel Aged coffees are rested in retired bourbon rum barrels for 40 days before roasting. Bourbon barrels can only be used to make a single batch of bourbon. After they are retired from a bourbon distillery, they can go on to hold rum for an unlimited number of batches. At some point in the barrel's life cycle, they have the honor of holding Chef Bob's coffee beans.
